Chunky Salsa


Salsa has to be one of the easiest things to make.  It is always a go to when my husband and I have company.  It requires very little work, not many ingredients, and it’s delicious.  I’ve never met anyone who doesn’t like salsa.  There are a million different ways to make salsa.  Chunky, blended, sweet, spicy, the options are endless.

It can be served with a big bag of chips and you’ve got your traditional chips and salsa.  You can make a Mexican or Spanish style pizza and use it as a garnish.  You can make a soup or chili and add salsa as a wonderful seasoning.  Serve it with tacos, enchiladas or quesadillas.  Mix it with some black beans for a yummy side dish.

Today I’m sharing my regular old fresh chunky salsa.  Nothing fancy.  I love to top my egg muffin cups with a little of this fresh salsa.

All you need is a few tomatoes, cilantro, onion, salt, pepper, cumin, lime juice and a jalapeno. 

Dice the tomatoes, onion and jalapeno and add it to a bowl.  Chop the cilantro and toss it into the mix as well.  Add in the seasonings and lime juice, give everything a quick stir and you’ve just made salsa.

The jalapeno can absolutely be left out if spicy isn’t your thing, or scoop out the seeds.  If you like really spicy add in another jalapeno or use a serrano instead.  I use serrano peppers if I have them on hand, but my grocery store didn’t have them this week.

  1. 3 large tomatoes, small dice
  2. 1 small onion, small dice
  3. 1 jalapeno, diced
  4. 1/2 cup cilantro, chopped
  5. 1/4 tsp. salt
  6. 1/4 tsp. cumin
  7. 1/8 tsp. black pepper
  8. juice of one lime
  1. Add all ingredients to a bowl and stir.
  2. Adjust salt and pepper to taste.
  1. Leave out the jalapeno if you don't like spicy.
  2. Scoop out the seeds of the jalapeno if you want the flavor but not all the heat.
  3. Substitute a serrano pepper for the jalapeno for a little more heat.
