Pico De Gallo

Pico De Gallo is that one thing that makes any Tex-Mex meal taste better.  Nothing else can add the freshness that pico de gallo adds.  It’s so delicious.  Tex-Mex is on the menu pretty much once a week in my house.  We just love it over here.  Pico de gallo often accompanies those Tex-Mex meals because it’s easy, it’s fresh, it tastes so good and my husband and I just love it. 

For those of you who don’t know what pico de gallo is, it’s essentially just a fresh chunky salsa.  Just a few simple ingredients that really add a punch of flavor to an Tex-Mex meal, I also really love it on fish.  Fish is already so fresh, but add a big scoop of pico de gallo and you’ve just taken that fish over the edge.

Now I always do pico de gallo one of two ways.  Both ways require the same ingredients.  Sometimes I chop the ingredients up pretty small, so it looks like your traditional pico de gallo.  Or sometimes I just do a rough chop of the ingredients, and we eat it as a salad.  It’s great either way.  I love making homemade salsas like this.  There are some really great jarred salsas out there, don’t get me wrong, I have several in my refrigerator right now.  Let’s just face it though.  No jarred salsa will give you the freshness that a homemade salsa gives.  I love too, that you can control the heat and taste as you go so you get the prefect salsa for you.

Here’s your shopping list:

Roma tomatoes – onions – jalapeno – cilantro – lime – salt

That’s it!  So simple.

All you need to do is chop.  Finely dice the tomatoes and onions.  Dice the jalapeno.  Now for the jalapeno, you can keep the seeds or remove the seeds.  You can leave it out completely if you really can’t handle any spice, although the pico de gallo will taste a lot better with it. Chop up the cilantro and toss everything into a bowl.  Juice a lime and season with salt to taste.

That’s all there is to it.  So next time you have a party, think twice before you grab that jar of salsa and try making some pico de gallo.

  1. 4 roma tomatoes, diced
  2. 2 small onions, finely diced
  3. 1 jalapeno, finely diced
  4. 1 cup cilantro, chopped
  5. Juice of 1 lime
  6. Salt to taste
  1. Toss the tomatoes, onions, jalapeno, cilantro and lime juice into a bowl.
  2. Season to taste with salt.
