Chocolate Chip Cookie Sandwiches

What’s better than one chocolate chip cookie?  Two chocolate chip cookies with something delicious sandwiched between the two that’s what!  Everyone has made chocolate chip cookies, we all have our favorite, and I don’t think there is anyone out there who doesn’t like chocolate chip cookies.  Have you tried out my perfect every time chocolate chip cookies? You wont be disappointed. 

So bake up a batch of chocolate chip cookies and spread some lovin’ on the bottoms and sandwich them together and you’ve got yourself a chocolate chip cookie sandwich.

Chocolate Chip Cookie Sandwiches You can put pretty much anything you want between two chocolate chip cookies, but I prefer Nutella (because everyone loves nutella, and if you don’t you should keep eating it until you change your mind, because honestly you should just want to eat it with a spoon right out of the jar) or marshmallow fluff, again because who doesn’t like ooey gooey sticky marshmallow-y goodness.  I will warn you though, using the marshmallow fluff may become a little messy when it comes time to eat the cookies, but trust me it’s well worth it.

Chocolate Chip Cookie Sandwiches These cookie sandwiches are always a hit, I’ve made them a few times for my husband to take to work and he never brings back any extra!  These are definitely a favorite.  I use almost the exact same recipe as my perfect every time chocolate chip cookies, except when I make them into sandwiches I like to add an extra egg.  The extra egg makes the cookie a little more cake-y and I think it works perfect!  Test them out and let me know what you think!

Chocolate Chip Cookie Sandwiches You know what else is so wonderful about chocolate chip cookies?  They make your house smell so darn good, the smell of baking chocolate chip cookies is right up there with anything baking that is full of cinnamon.  It makes me feel all cozy inside, and you know what, I know it’s still summer but I’m ready to feel all cozy.  Being pregnant all through summer has made me just want to be able to steal a pair of my husbands sweat pants (because I’m sure mine wont fit me right now), and while I’m at it one of his sweat shirts too, because well I always feel more cozy wearing his sweats than mine and cuddle up and relax.  Well relax as much as having an active two year old boy allows you to, which isn’t much but I take what I can get.

I didn’t say I’m ready for snow and freezing temperatures, I’m just ready for crisp morning air and to be able to go for a walk and not need to shower afterwards.  I don’t know how it’s been where you live but out here where I am it has been so humid all summer and I’m so over it.  That’s why I’m baking chocolate chip cookies and treats that are full of cinnamon, like these overnight cinnamon rolls.  If you haven’t tried them yet you have to!

Chocolate Chip Cookie Sandwiches It doesn’t help my being ready for fall that I’ve been crafting new fall decorations like crazy!  I’ll share some of those with you when I get them all finished.  I’m excited!  Oh and I’m just counting down the days until we can go apple picking!  That is one of my favorite things to do, I just hope it’s not going to be 80 degrees outside when we go, because it is just not the same when you are picking apples and you have to wear shorts and a tank top!  It’s supposed to be chilly when you’re picking apples!  So get ready to be bombarded with apple recipes!  I bet you can’t wait!  I can’t!

Back to the cookies!  Bake a batch of chocolate chip cookie sandwiches and be creative with the filling.  I like to use nutella and marshmallow fluff.  You can do peanut butter, make some caramel frosting, use a nut butter heck go to the grocery store and buy a tub of frosting from the baking aisle.  Get creative.  Try out this recipe and let me know what you come up with!

Chocolate Chip Cookie Sandwiches

Yummy goodness sandwiched between two soft cake like chocolate chip cookies - what could be better!

  1. 1-1/2 cups all-purpose flour
  2. 1 cup whole-wheat flour
  3. 1 tsp. baking soda
  4. 1 tsp. baking powder
  5. 1 tsp. salt
  6. 2 sticks unsalted butter, softened
  7. 1 cup brown sugar
  8. 1/4 cup granulated sugar
  9. 1 tbsp. vanilla
  10. 3 eggs
  11. 12 oz mini chocolate chips
  12. Nutella
  13. Marshmallow fluff
  1. Preheat oven to 375.
  2. In medium bowl combine the all-purpose flour, whole-wheat flour, baking soda, baking powder and salt. Stir to combine and set aside.
  3. In a large bowl with an electric mixer beat the butter, brown sugar and granulated sugar until creamy. Add in the vanilla extract and eggs and beat until combined. Slowly add in the flour mixture beating on low until the flour is just incorporated into the batter.
  4. Using a spatula or spoon stir in the chocolate chips.
  5. Using a 1-1/2 tablespoon cookie scoop, place the dough onto parchment lined baking sheets about two inches apart.
  6. Bake in the preheated oven for 10-12 minutes.
  7. Let cookies cool on the baking sheet for two minutes before transferring to a wire rack. Let cookies cool completely before assembling the sandwiches.
  8. Spread your filling of choice on the bottom of one cookie and place another cookie on top to form the cookie sandwich. Use as much or as little of your filling of choice.
