Apple Streusel Cheesecake Bars  | In the Kitchen with Lauren These delectable bars have four layers of goodness, a graham cracker crust, a cheesecake layer, cinnamon-y apples are next and it’s all topped with a streusel layer.  You can always add a fifth layer and drizzle on some caramel sauce!

These may look a little complicated, and there are quite a few steps but they are all easy and so worth it!

Apple Streusel Cheesecake Bars  | In the Kitchen with Lauren Lets start off with the graham cracker crust.  I think a graham cracker crust is better than any other crust out there.  For these apple streusel cheesecake bars I actually combined regular honey graham crackers and the cinnamon graham crackers.  I thought it was a nice touch!  There is cinnamon throughout two other layers so I thought why not add it to another one.  By the way these apple streusel cheesecake bars have a really thick graham cracker crust layer!  I already told you that I think a graham crust is the best so I made it extra thick – I used two entire sleeves of crackers!

Apple Streusel Cheesecake Bars  | In the Kitchen with Lauren The cheesecake comes next.  Who doesn’t like a cheesecake?  Have you ever made a cheesecake?  Did you think it was going to be as easy as it actually is to make?  There really isn’t much to a cheesecake, it’s so versatile too.  There are endless options of what you can do with a cheesecake.  For these bars I just left it pretty simple.  Nothing crazy going on with the cheesecake layer, at least not this time. 🙂

Apple Streusel Cheesecake Bars  | In the Kitchen with Lauren Apples are next.  I still had some apples leftover from when we went apple picking so I had a variety of apples.  You can use whatever kind you like or have on hand.  I never liked the “rules” for which apples are better for what purpose.  Just use what you like. It doesn’t matter how sweet or tart or crisp or soft the apples are.  You decide what to use.  I always choose crisp tart apples no matter what I’m using them for.  Those are the kinds my family likes to eat so that’s what I bake with.

Apple Streusel Cheesecake Bars  | In the Kitchen with Lauren I hope you guys give these a try.  My dad, who isn’t a big sweets guy loved these.  I thought they were going to be too sweet but he said he thought they were really good.  He’s the one that asked for a sample.  I sent a picture to my mom when I made these because shes the one with the sweet tooth and she responded back with “dad wants a sample!”

Apple Streusel Cheesecake Bars  | In the Kitchen with Lauren My husband loved these too.  They really are quite simple and they are pretty rich you can get away with cutting them into smaller bars and feed more people.  These would be great for a party.  I used a 9×9 inch pan and got 16 bars.  It worked out perfect!

For the crust
  1. 1 sleeve honey graham crackers (9 full cracker sheets)
  2. 1 sleeve cinnamon graham crackers (9 full cracker sheets)
  3. 1 stick butter, melted
  4. 1/4 cup granulated sugar
For the cheesecake
  1. 2 - 8 oz. packages cream cheese, softened
  2. 2 eggs
  3. 1/3 cup granulated sugar
  4. 1 tsp. vanilla extract
For the apple layer
  1. 2 cups apples - peeled, cored and small dice
  2. 1/4 tsp. cinnamon
  3. 2 tbsp. brown sugar
For the streusel
  1. 3/4 cup brown sugar
  2. 3/4 cup all-purpose flour
  3. 3/4 cup old fashioned oats (quick oats will work too)
  4. 1 tsp. cinnamon
  5. 1 stick butter, softened
  1. Preheat oven to 350 degrees F.
  2. Liberally grease a 9x9x2 inch pan.
  1. Finely crush graham crackers either in a zip top bag or pulse in a food processor. Add graham cracker crumbs to a bowl with the sugar and melted butter. Mix well until the graham cracker crumbs are coated in the butter.
  2. Press the graham cracker mixture into the bottom on your prepared baking dish. Using the bottom of a measuring cup firmly press the graham cracker crumbs so they are well packed.
  3. Bake in the preheated oven for 10 minutes.
  1. Meanwhile using an electric mixer beat the cream cheese in a medium bowl until smooth and creamy. Add the eggs, sugar and vanilla and beat until well combined.
  1. In a separate bowl, mix together the chopped apples, cinnamon and brown sugar and set aside.
  1. In another bowl combine the brown sugar, flour, oats and cinnamon and stir. Cut the butter into several chunks and add to the bowl. Using your hands combine the butter with the sugar and oat mixture until no loose flour or oats remain in the bottom of the bowl.
  2. After the crust has been removed from the oven, carefully pour the cream cheese mixture over the hot crust. Spread evenly.
  3. Layer the apples across the cheesecake layer.
  4. Cove the apples with the streusel topping.
  5. Place back in the oven for 45 minutes or until cheesecake layer is set.
  6. Let cool completely before cutting into bars. Store in the refrigerator.
