I’m back!  It seems like I haven’t written or shared a new recipe for weeks.  I had some computer issues.  Long story short we needed to get a new computer!  I’m all hooked up and my fingers ready to type away and share some fun new recipes with you. 

I already told you that we went apple picking a few weeks ago for the second time this fall so you can imagine how many apples we still have. I was thinking of something new to make with apples and I haven’t made cupcakes for a while so that’s where I’m taking you today – the land of cupcakes. I love a good cupcake. In the land of cupcakes today I’ve got for you delicious and sweet Cinnamon Apple Pie Cupcakes. This cupcake is so tender and I absolutely love all the cinnamon that goes in the batter, and then you are hit with a super amazing apple pie filling. These are one of my favorites.

I will admit, these didn’t work out so well when the first batch came out of the oven. The first batch so did not have enough cinnamon, you can bet that I fixed that issue!  I also filled the cupcake liners up just a tad too much and my cupcakes weren’t very pretty so we went for round two. Round two came out perfect!

There isn’t anything crazy about the cupcake batter for these Cinnamon Apple Pie Cupcakes. It’s just your typical batter with cinnamon added in. Don’t be fooled though, the cinnamon takes the cupcake to a whole new level!

The fancy part comes in when you make the apple pie filling. It’s not even fancy by itself, it just takes your cupcakes from being a cupcake to being a fancy cupcake!  The filling is really easy to make too. You just need to sauté diced apples in some butter, add a little sugar and salt, then comes the cornstarch to thicken it up and bam that’s it!

I made a cinnamon apple cider butter cream to go with these decadent cupcakes and the combination works perfectly together. For my buttercream this time I combined butter and shortening and I really like the texture you get when you use both. You can use all butter though if you prefer.

I hope you give these a try. They are the perfect sweet treat for fall and a great treat to bring to Thanksgiving. I know I know I’m talking about Thanksgivng and we haven’t even gotten to Halloween yet!  I can’t help myself, and I’m more of a decorate for fall rather than Halloween kinda gal.

For the cupcake batter
  1. 1-1/2 cups all-purpose flour
  2. 2 tsp. baking powder
  3. 1/2 tsp. Salt
  4. 1 stick unsalted butter, softened
  5. 3/4 cup granulated sugar
  6. 1/4 cup brown sugar
  7. 2 eggs
  8. 1 tsp. vanilla extract
  9. 1 tsp. Ground cinnamon
  10. 1/2 cup milk
For the Apple Pie filling
  1. 1-1/2 cups apples - peeled, cored and small diced
  2. 3 tbsp. butter
  3. 1/3 cup granulated sugar
  4. 2 tbsp. brown sugar
  5. 1/8 tsp. Salt
  6. 4 tsp. cornstarch
For the frosting
  1. 1-1/2 sticks unsalted butter, softened
  2. 1/2 cup shortening
  3. 3-1/2 cups powdered sugar
  4. 1 tsp. vanilla extract
  5. 1/2 tsp. cinnamon
  6. 2 tbsp. apple cider
For the cupcakes
  1. Preheat the oven to 350 degrees F. Line your muffin tin with paper liners. This recipe will make 18-20 cupcakes.
  2. In a medium bowl whisk together the flour, baking powder and salt and set aide.
  3. In a large bowl, cream together the butter and sugars until smooth. Add in the eggs, vanilla extract and cinnamon and beat until combined.
  4. Alternate adding in the flour and milk to the wet mixture, ending with the flour.
  5. Fill the prepared muffin tins 2/3 of the way full with the batter.
  6. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean.
For the filling
  1. Peel core and dice 1-1/2 cups apples.
  2. Melt the butter in a small sauce pan and add the apples and the sugars.
  3. When the sugar has dissolved add in the salt and cornstarch and continue cooking a few more minutes until the mixture has thickened.
  4. Let cool completely before filling the cupcakes.
  5. To fill the cupcakes, core out a small hole in the top of each cupcake using a large piping tip, small paring knife or a melon baller. Any of those will work perfect.
  6. Fill each hole with the filling.
To make the frosting
  1. Beat the butter and shortening until smooth, using an electric mixer.
  2. Add in the powdered sugar one cup at a time and beat until incorporated.
  3. Add in the vanilla extract, ground cinnamon and apple cider. Beat until just combined.
  4. Frost cupcakes.
