Chewy Molasses Cookies | In the Kitchen with Lauren Have you ever tried molasses plain, all on it’s own?  Well don’t!  It’s like vanilla extract, it smells good and it always makes things taste better, but all on it’s own, yuck!  Trust me!

Don’t let that fool you though.  When you mix molasses with a few other ingredients and bake them a delicious cookie is the result.  These molasses cookies are so unbelievably chewy, hence the name, and soft.  They aren’t like other cookies that need to be under baked to get that soft chewiness we all crave in a cookie.  Nope, it’s just the molasses!  

These truly are the perfect chewy cookie, you won’t be able to just eat one.  This recipe makes two dozen, they didn’t last very long in my house.  Oh I forgot to mention, on top of these Chewy Molasses Cookies being so soft and chewy, they are sprinkled with a little extra sugar!  A sprinkle of sugar makes everything better.

Molasses cookies are always popular around the holidays.  They make a great choice for your cookie exchange party or a hostess gif, a holiday favorite you can whip up in no time.  They only need a few ingredients and aren’t nearly as complicated or time consuming as many other treats we see filling the plates and cookie tins this time of year.  There’s no chilling of the dough, no food coloring, no rolling out dough or trying to slice uniform cookies.  Nope, you just toss everything into one bowl, scoop, bake and that’s it.

These Chewy Molasses Cookies are so easy but aren’t they pretty too?  I just love the cracks all over the top of the cookies.

  1. 1 cup light brown sugar
  2. 3/4 cup shortening
  3. 1/4 cup molasses
  4. 1 egg
  5. 2-1/4 cups all purpose flour
  6. 2 tsp. baking soda
  7. 1-1/2 tsp. ground cinnamon
  8. 1 tsp. ground ginger
  9. 1/2 tsp. ground cloves
  10. 1/4 tsp. salt
  11. granulated sugar for sprinkling
  1. Pre heat oven to 325 degrees F.
  2. Line baking sheets with parchment paper.
  3. With an electric mixer, beat together the brown sugar, shortening, molasses and egg until combined.
  4. Add in the flour, baking soda, cinnamon, ginger, cloves and salt. Beat on low until just combined.
  5. Scoop 1-1/2 tablespoon size balls of dough onto the prepared baking sheets. Sprinkle with sugar.
  6. Bake in the preheated oven for 13-15 minutes.
  7. Let the cookies cool for two minutes on the baking sheets before transferring to a wire rack to cool completely.
  1. When measuring out the molasses, spray the measuring cup with with non-stick cooking spray. It'll allow all of the molasses to fall right out of the cup.
